Soul Delicious: Holiday Recipes Everyone Will Be Begging You to Make Again

Whether Friendsgiving or family cook off, the holidays are a cook's time to shine

Eggnog

What is your favorite holiday dish or dessert to prepare for the holidays season? Personally, I always seek out something savory followed up by something sweet! Once Halloween wraps up it is time to eat! My crew and I host a quarterly event that we call booze and bites! Booze and bites is a gathering where we curate seasonal drinks, an appetizer menu, and play games. Some games are tailored to the season and others are just for fun and some not so friendly competition, like Taboo which can get heated!

Between November and December most people host and attend Friendsgiving gatherings, potlucks, and holiday parties. Attendance typically requires you to bring a dish, don’t be the person who brings the rolls or store-bought sides, be the person that brings the heat! I have two perfect few recipes for you that will have your folks raving until the next holiday season!

First up we have the crab cake! Based on the recipe below you can yield a maximum of about eight crab cakes. The preparation time is about ten minutes, and cooking time is about 20 minutes (3 to 5 minutes per side per crab cake).

The following ingredients are needed for this recipe:

  • 1 large egg, beaten to blend
  • 1/3 cup of mayo
  • 2 tablespoons of mustard
  • 2 teaspoons of Worcestershire Sauce
  • ½ teaspoon of hot sauce
  • Seasoning Salt (Until the Ancestors say to stop)
  • Ground black pepper (Until the Ancestors say to stop)
  • Old Bay Seasoning (Until the Ancestors say to stop)
  • Garlic Powder (Until the Ancestors say to stop)
  • Onion Powder (Until the Ancestors say to stop)
  • Italian Seasoning (Until the Ancestors say to stop)
  • 1 of jumbo lump crab
  • ¾ cups of panko breadcrumbs
  • 2 tablespoons of parsley
  • ¼ cup of canola oil or more depending on skillet size

Here are the four easy steps for preparing the crab cakes:

  • Step 1: In a bowl whisk the egg, mayonnaise, mustard, Worcestershire, and hot sauce
  • Step 2: In another bowl stir crabmeat, panko breadcrumbs, seasoned salt, ground black pepper, old Bay, garlic powder, onion powder, Italian seasoning, and parsley. Fold in the egg mixture and form 8 patties.
  • Step 3: Coat a large skillet with canola oil. Adjust the heat to medium/high temperature until the oil is heated. Cook the crab cakes in batches turning halfway through until golden in color and crispy. Approximately, 3 to 5 minutes per side.
  • Step 4: Plate and Serve!

The second recipe is one of my all-time favorites! My family always loved it and it was a staple during the holidays, but I thought it was disgusting in my youth. It wasn’t until my adulthood that I got into the hype about eggnog. But, let me tell you once I feel a little chill in the air it’s time for me to prepare it! Based on the recipe below you can yield a maximum of about eighteen servings of eggnog. The preparation time is about fifteen minutes and cooking time is about 10 minutes.

The following ingredients are needed for this recipe:

  • 18 large egg yolks
  • 1.5 cups of granulated sugar
  • 3 cups of heavy whipping cream
  • 6 cups of milk
  • 1.5 teaspoons of ground nutmeg
  • Pinch of salt
  • 1 teaspoon of vanilla extract
  • Ground cinnamon for garnish
  • Once recipe is completed you can add alcohol of your choice per serving

Here are the ten steps for preparing the eggnog:

  • Step 1: Whisk egg yolks and sugar together in a bowl until light and creamy
  • Step 2: Over medium to high heat combine heavy cream, milk, nutmeg, and salt. Constantly stirring until a bare simmer is achieved.
  • Step 3: Add ladle of the hot milk to the egg mixture. Be sure to whisk actively. Repeat this step to temper the eggs.
  • Step 4: Once hot milk has been added to the eggs pour the mixture back into the pot on the stove.
  • Step 5: Whisk actively until the mixture has slightly thickened. T will get thicker once it cools.
  • Step 6: Remove from heat and stir in the vanilla.
  • Step 7: Pour the eggnog through a mesh strainer into serving pitcher or container and cover with plastic wrap.
  • Step 8: Refrigerate until chilled.
  • Step 9: Serve with a sprinkle of cinnamon.
  • Step10: Can store the eggnog in the refrigerator for up to one week.

Those are two of my favorite holiday hookups! I hope these recipes are as delicious for you and your family and give folks something to talk about and to look forward to during the holiday season as they have for my village over the years!
